Milford Farms' Chestnut Pork Breeding . . .
We were tired of producing pork that was dry, tasteless and really difficult to cook just right. So we went in search of a breed with more traditional eating qualities to give us juicy, tender and tasty pork.
We developed our own three way cross. The unique ingredient is the Duroc from America, which provides us with the old fashioned carcass characteristics. It is known as the 'Black Angus of Pork', for the higher fat levels in the meat, both marbling within the muscle and fat around the muscle. The meat itself is slightly darker in colour, indicating a higher ph and giving a much softer texture. The pigs are all bred and reared on the farm. They are all kept in barns with plenty of fresh air and fresh bedding. All are fed a homemade diet with ingredients sourced locally. |
